White Peach, Spinach & Basil Pizza

We went to the local farm and bought a peck of organic peaches. We don’t want to can or freeze them so we decided to use them as much as we can until they run out. Here is one of the more appealing experiments:

Homemade pizza dough (recipe below)

OR you can use a packet mix that is usually in the pizza section of the grocery store.

1 cup of torn spinach

1/2 cup of fresh basil torn
2 sliced peaches
1/2 cup of shredded mozzarella
2 Tablespoons of corn meal
3 Tablespoons olive oil
sweetbasil

Dough
1 packet of yeast
1 cup warm water
2 1/2 cup flour
1 Tablespoon of honey
1 Teaspoon salt
2 Tablespoons olive oil

Preheat oven to 400 degrees Fahrenheit.
Mix yeast, warm water, flour, honey, salt in a large bowl. (Wooden spoons are good for this part.)
Prepare a ball out of the dough and pat with olive oil and let sit 10-15 minutes. Cover with a towel or a few folded paper towels. Put it someplace warm.

Corn Meal

Tear spinach and basil, set aside. Cut peaches into thin slices, set aside. Spray pizza pan with oil (lightly), coat with a thin layer of corn meal.

If it has been 10 minutes, check the dough, it should be pouffy.
Spread dough on pan. Pinch together any holes.
Top with olive oil, should cover the dough to keep it moist during baking.
Layout peaches, spinach and basil and cover with cheese.

Peachpizza

Bake for 20-24 minutes.
